Executive Chef Paul Martin

With an impressive resume under his belt, Paul Martin brings with him two decades worth of experience ranging from four-star hotels and elite farm-to-table restaurants. His exceptional culinary background combined with his flair for hospitality lends him as an exceptional leader of Fifth Group’s Ecco, centered around modern European cuisine.

A Louisiana native, Martin first recognized his passion for cooking while working at his father’s restaurant at just 14 years old. Later on and after years of working as the chef for Oregon’s Valley River Inn, Martin planted roots in Philadelphia to join Stephen Starr Restaurant Group in 2005, where he would go on to serve as sous chef for four of the group’s concepts before eventually onboarding as executive chef with SOUTH, a southern-inspired concept in the heart of Philadelphia. Martin credits his time with SOUTH as a defining moment in his career – not only did the concept’s wood-fired cooking techniques ultimately transform his cooking style, but his time with SOUTH also allowed him to reconnect with his southern roots and passion for the great American south.

In 2018, Martin settled back down south where he joined the Barcelona Wine Bar team as executive chef before joining Rocket Farm Restaurants in 2019 at King + Duke, followed by Ray’s Restaurants and Southern Gentleman.
